Live Cocoa and Live Chocolate.

This is the goal of an intense week of conviviality, new learnings, unique and exclusive experiences, connection with the cocoa production chain. Awakening beyond chocolate production processes, essential for the professional in chocolate making.

Under the Atlantic Forest, we will experience the specificities of each stage of quality cocoa bean production and improve knowledge of pre-processing processes, developing sensory perceptions and forming awareness about sustainability in the cocoa and chocolate production chain.

PROGRAM:

Visit to Cocoa Farms with harvesting practices, fermentation and drying of cocoa beans, Cocoa and Chocolate Sensory practices, and visit with practices to a Tree to Bar chocolate factory.

- The owners and cocoa producers of the Farms are our hosts, enriching the experience making it unique and for life.

- Teachers Adriana Reis and Neyde Alice Bello accompany the group at some moments throughout the week, promoting exclusive, singular learning in a fascinating immersion.
